I will literally laugh in your face when someone says, “vanilla is boring.” Try this!
Paleo French Vanilla Bean Ice Cream
- 1 can coconut milk, full fat
- 3 tbsp maple syrup
- 1 vanilla bean
- 3 egg yolks
- pinch of salt
Combine coconut milk, syrup, scraped vanilla beans and vanilla pod into a medium saucepan over low heat, stirring constantly. When milk mixture begins to simmer, add a ladle of hot milk mixture to egg yolks, whisking constantly until completely incorporated and up to heat. Immedietly transfer milk mixture to sauce pan, whisking until mixture coats the back of a spoon. Strain mixture to remove vanilla beans and any other impurities (i.e. any cooked egg yolks) then transfer to fridge 2 hours – overnight to chill well.
Once ice cream is chilled, pour mixture into ice cream maker and use as directed, If you do not have an ice cream maker, pour ice cream mixture into a bread pan (9×5 or similar) and freeze.
