Fall

One of my favorite recipes! imageHi darlings! It’s been too long, and I’ve been swamped with work lately but I can finally see the light at the end of the tunnel. Here’s how I launch Fall (even though we have no seasons where I live…) with this Apple Spiced Maca Oatmeal. 💛🍂

2/3 cup of old fashioned oats 🍑🍎
2/3 cup of almond milk
1 cup of filtered water

1 apple, finely grated
1 inch ginger, finely grated
1/2 of a whole nutmeg, grated
1 teaspoon maca powder (I use Organic Burst)
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
Brown or Coconut sugar, optional

Add first 3 ingredients in a small saucepan and stir constantly while cooking on low heat. When almost all the liquid is absorbed and the oats are cooked and creamy, turn heat off and add remaining ingredients. Stir well until fully combined and serve immediately. I topped mine with more cinnamon, a sprinkling of coconut sugar, sliced nectarines and a teaspoon of almond butter. 😊 This would be great with some toasted nuts! PS – how cute is this bowl?!
